Here on the frontier, There are falling leaves, Although my neighbors are all barbarions…And you? You are a thousand miles away. There are always two cups on my table.

This is a delicious recipe for cornbread made without cornmeal!

It’s a little bit sweet and very yummy made with whole kernal corn.

You will need:

– 1 (15 ounce) can of whole kernal corn              – 1/2 cup of milk

– 1 1/2/ cups of flour                                                   – 2 large eggs

– 1/2 cup of sugar                                                         – 1/4 cup soft margarine

– 1 tablespoon baking powder                                 – 1/4 cup of honey

– 1 teaspoon salt

Stir the dry ingredients in a small bowl.

In a larger bowl beat the eggs, milk, honey, margarine and corn.

mix the 2 bowls together.

Pour into a greased deep dish pie pan or an 8×8 inch baking pan.

Bake at 400 F for 25 minutes or until the top is  golden.

I have never much liked cornbread myself but had a few cans of corn to use up so was inspired to develop this recipe.

It’s so good!

Sweet enough to stand alone as a dessert or a side dish to a meat meal.

  16. For certain drain the corn. I am not sure creamed corn would work but I would try it as an experiment.Sorry so many are turning out salty one level tablespoon is actually what I use but certainly reduce that if you prefer less salt!

    • Many have commented on the tablespoon of salt in this recipe. Because of this I have altered the recipe to read one teaspoon. I apologize for any salty corn-breads out there. Be sure to try using our super summer’s abundance of fresh corn. Just pop a couple of ears into the microwave for a few minutes. shuck them, cut off the kernals and use them in place of the canned version. Awesome.

  20. This was good but I would make it in a larger pan. The sides were getting dry before middle was done. Otherwise I loved it.

      You are so right. This recipe is too awesome. I have never made cornbread without cornmeal. I actually made this recipe and it is awesome. My family loves it and so do I. I don’t think I’m going to use cornmeal anymore. I’m going to use real corn for my cornbread from now on. I have a grand baby whose going to turn 2 years old May 15th, 2013 and the corn inside the cornbread is good for her because at this age it helps her to be nutritious and actually this recipe is a very nutritious meal in itself because of the veggie in it.

      Normally when I cook I always like to cook vegetables with every meal to make the meal more nutritious and at the same make it taste good so my grand baby will eat it. That’s just the way this recipe is nutritious and good all at the same time. Wow how awesome.

  33. I was hunting for a corn bread recipe with out corn meal (I think it always makes a really dry bread) and I found your site. Thank you for the recipe. It sounds easy and I’m going to be making it tonight to go along with our Chili supper. It’s cold here in Northwest Indiana and we need a hearty meal today.   40. I made this tonight with red beans and rice. It was a little too sweet for my liking. reminded me of cake instead of corn bread. But it was still really good! I used left over corn on the cob instead of the canned, and I put the wet ingredients into my ninja to puree up the corn a little bit. Next time i’ll cut the sugar in half or completely, i think the honey and the corn might be enough for me.

  41. i used your recipe as a guide and modified in these ways:
    12oz fresh off the cob corn pureed and heated on medium until golden plus a cob’s worth of fresh corn mixed in with a jalapeno (no seeds) i used brown rice flour to make it gluten free and used bananas instead of egg (1 ripe banana per egg) and i used maple syrup instead of honey. took a little longer to bake but turned out a beautifully. its supposed to be cooling and untouched but i keep spooning up warm bites. yum

  56. Thanks for the great recipe, so tasty! I reduced it to 1/3 cup sugar, 1/4 tsp salt and 1/4 cup maple syrup instead of the honey (what I had on hand). I did boil 2 cups frozen corn and purée it, so you don’t see the corn for the picky eaters.

    1) a combo of coconut flour, carbalose and pastry flour to reduce some of the carbs
    2) substituted Swerve for the sugar but left the honey alone
    3) used two fresh, boiled, ears of white corn
    4) one extra egg because coconut flour absorbs liquid more

    Right now it is baking and smells heavenly in the house. I’m not a fan of commercial corn meal so your recipe was just was I was seeking. All the above great reviews lead me to believe this will make for a nice side dish tonight with our chicken 🙂

    Thank you for posting this recipe!! I was making chili when I realized I didn’t have enough Bobs Red mill cornmeal for my cornbread. I searched for recipes using can corn without cornmeal and found yours.:) it became a good base for what I ended up throwing together. I did modify it a tad as I didn’t want it too sweet with the chili. Only added 2 Tbsp sugar, omitted the honey. Used butter instead of margarine. Also, drained the liquid from the can into a cup and added about 2oz of that into the mix. Then put the corn in my food processor and chopped up until no big chunks remained. Kept everything else the same. Crossed my fingers and hoped for the best. And honestly I think it’s the best cornbread I’ve ever had. Very moist, great flavor..mmm so good.
