Snow Day Cinnamon Raisin Oatmeal Cookies
Another cold day in Baltimore.
Snow coming in this evening.
Freezing rain all day tomorrow.
Ho-hum.
Cujo and I have a little peace and quiet for a change.
Hoo has started day care while his mama gone back to college to finish her degree.
I can see the dust settling on the floor.
In the quiet and relative light of these few hours I’m baking some cookies and reading “Little Bee”.
Treating myself to a good cup of coffee and life is alright today.
Draw a breath mamas.
The door will be banging open any minute.
Let the cookies cool.
Oatmeal Cookies From Cujo and Gmom

Blend together:
3/4 cup butter or margarine
1/2 cup white sugar
1/2 cup brown sugar
Add in:
2 eggs
1 teaspoon vanilla extract
1 1/4 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
Once that is all mixed. Using a large spoon mix in:
3 cups of whole oats (not the quick cooking variety)
1 cup of raisins
1/2 cup of chopped walnuts or pecans (optional)
Handmix until the batter is combined. don’t overwork this batter.
Drop by spoonfuls on cookie sheet and bake at 340 F for 10-15 minutes or until golden brown.
That is not a typo.
350 F is just a bit too hot for this recipe and leaves a sticky middle and burnt edges on the cookies. 340F seems to work just right.
